B.C. Cherry Crumble Bars

Here is a lovely recipe to enjoy with your family while relaxing in the Alberta Sun.   

 Steve and Dan's B.C. Crumble Bars

Cherry crumble bars


Ingredients
Crumble:
1 ½ Cups oat flour
1 Cup rolled oats
½ Cup coconut sugar
½ Tsp cinnamon
¼ Tsp baking soda
½ Cup coconut oil, melted
1
Tbsp vanilla extract
½ Tsp almond extract
For the filling:
2 Cups cherries, pitted
3 Tbsp maple syrup or Honey

Tbsp tapioca flour/starch
¼ Tsp almond extract

Instructions
1.Preheat oven to 350 F. Line an 8x8 inch pan with parchment paper. Set aside.
2. In a large bowl, mix together oat flour, oats, coconut sugar, cinnamon and baking soda. Add coconut oil, vanilla and almond extract and stir until a nice crumble forms and dough begins to clump together.
3. Place 1 ½ cups of the mixture into the pan and place the remaining mixture into the fridge. Using your hands, press the dough to the bottom of the pan.
4. For the filling,
place a medium pot over medium heat. Add in pitted cherries, maple syrup, almond extract and tapioca. Stir well. Bring to a boil, then reduce heat and cook for 5 more minutes until mixture is thickened up.

Pour cherry mixture over the crust and spread it with a spoon. Sprinkle the remaining topping over the tart cherry filling. Bake for 30 minutes or until golden brown crust.
